    Huli Huli chicken stands are common throughout the Islands. The original concept was Invented by Ernest Morgado, president and founder of Pacific Poultry Co. Ernest first barbecued his chickens at a farmer's meeting in 1955. The chicken, marinated in a teriyaki sauce from his mother's recipe, was an instant hit. The result was so popular that he began making the chicken to sell at fund-raisers. Morgado barbecued mass quantities of chickens between two grills. When one side of the chicken halves was cooked, someone would shout, "huli," Hawaiian for "turn," and the workers would flip the grills over.

    Morgado liked the name "huli- huli" so much that he registered the trademark with the Territory of Hawai'i in 1958 and the federal government in 1965. Later, he began bottling the marinade, now an Island staple.

    In 1981, Morgado was listed in the Guinness Book of World Records for the largest chicken barbecue ever. His company cooked 46,386 chicken halves at a fund-raiser.

    Though the double-grill "huli" method is not, strictly speaking, rotisserie, some of today's chicken fundraising companies have begun using contraptions with multiple rotisseries that "huli" without human help. For true Huli Huli, chicken halves are cooked over a charcoal fire on metal frame screens that are flipped by hand.

    Huli Huli Chicken Sauce

    1/3 cup ketchup
    1/3 cup soy sauce (Bulk Kikkoman sauce is the most authentic flavor)
    1/2 cup brown sugar
    3 tablespoons sherry wine (alternatively chicken stock could be used)
    1 piece gingerroot, crushed
    1 garlic clove, crushed

    Combine marinade ingredients and marinate for at least 4 hrs. or overnight before broiling or grilling chicken.

    This makes enough marinade for 5 lb. of chicken.
