    Burgenland is a region of Austria on the border with Hungary. There are many Hungarians and Croats living in the area. The main language is the local dialect of Austrian German. It is a far different world than Vienna, only 40 miles away.

    Palessen is a type of Pfannkuchen, Pannakoeken or crepe found in the Burgenland region of Austria. In the U.S., we might call them close relatives of Apple Fritters. The pastry is somewhat related to (Apfeltaschen) “Apple Bags or Apple purses.�

    The local Burgenland words Palessen or Palacin are related to
    Palatschinken or sometimes Palatschinta (German)
    Palacsinta (Hungarian)
    Palacinka or PalaÄ?inka (Czech/Croatian)

    But this recipe is not quite the same as those commonly found in other areas of East-Central Europe.

    5 Eidotter
    Klemme Salz
    1/8 Liter Milch
    1/2 kilogramm Mehl
    1/8 Kilogramm Butter
    2 Teelöffeln Rum
    3 Kilogramm äpfel zogen ab und “riced�
    Klemme Zucker

    Sie muessen eine Minute auf erster Seite fritieren. Dann Umdrehen.
    FĂĽr eine weitere Minute braten
    BesprĂĽhen (Staub) mit Puderzucker/Staubzucker (pulverisiertem Zucker)

    (English)
    5 egg yolks
    Pinch of salt
    1/8 liter milk
    1/2 kg flour
    1/8 kg butter
    2 teaspoons rum
    3 kg apples peeled and riced
    Pinch of sugar

    Deep fry for one minute on first side. Turn over. Fry for one minute more.
    Sprinkle/dust with powdered sugar
