The nice folks at DVDAnswers have compiled a very detailed look at the Star Wars Trilogy DVDs. There are things in the movie that you will not even realize have changed.
Chris Gould has taken a detailed look at the original movie, the Special Edition, and the new DVD release of Star War Episode IV: A New Hope
Biggest suprises to me so far:
Jawa Sandcrawler shot was totally changed
Removal of flashes when blaster bolts hit humans
Also, I had noticed that Ben Kenobi's "Dragon" sound effect (used to scare the sandpeople) changed. I liked the original wail better, even though the sound was from the dewback.
